
Serves 8-10
1 ripe pineapple
1 liter vodka (we like Tito’s)
3 cups cranberries
Remove the outer layer of the pineapple and trim the top and bottom. Cut the fruit into wedges (you don’t have to remove the core – it’s all good.)
Place the pineapple into one large glass container, or a few smaller ones. Top with a few cranberries, then pour the vodka over. Be sure to add enough vodka so the alcohol covers all the fruit. Close the jar or jars, and allow to marinate for 2-3 weeks. It’s okay to leave it on the counter.
Strain the vodka. You can save the soaked pineapple and freeze the pieces. They’re good in frozen drinks (careful though, they’re potent).
Shake the pineapple vodka in a shaker with ice, then serve straight up with a pineapple spear for garnish.
